Decatent Feta Cheesecake Cupcake

Enjoy a Crunchy walnut crusted Lemon Cheesecake Cupcake.  This is made with sweet whipped cheesecake filling and  a mixture of real Greek Feta Cheese with Cream Cheese…….. the result is a sweet, salty and delicious dessert.  Perfectly topped with Walnuts and honey or covered in decadent Belgian Chocolate……………… 

Ingredients

225 grams Feta Cheese

225 grams Cream Cheese

½ cup heavy cream

2 large eggs

¾ cup sugar

2 Tbsp. flour

1 Tbsp. finely grated lemon peel

Juice of one lemon

1 Tbsp. vanilla flavour

12 Digestive Biscuits

½ cup salted pistachio’s (or walnuts)

113 grams unsalted butter (melted)

225 grams semi sweet chocolate chopped

113 grams heavy cream

Instructions

  1. In a food processor add the digestive biscuits and nuts and process into crumbs for crust
  2. Add melted butter to crust mixture and form into crust in a greased cupcake pan, or cupcake paper cases.
  3. Bake crust for 10 minutes at 350 degrees F (180 degrees C)
  4. In the bowl of the food processor, add the feta and heavy cream and process, until smooth.
  5. Add in cream cheese until mixed well
  6. Add in eggs, lemon juice, vanilla and lemon peel and process until blended well.
  7. Add in flour and sugar and process until all is incorporated and mixture is smooth and creamy*
  8. Pour mixture into cooled cupcake shell or cupcake case and bake at 315 degrees F (165C degrees) for about 18-20 minutes do not let it get too dark or crack.
  9. While cheesecake is baking prepare the chocolate covering.
  10. Over a pot of boiling water in a metal bowl add your chopped chocolate and heavy cream, stirring until all the chocolate is melted and is smooth.
  11. Allow chocolate to cool while cheesecake is cooling.
  12. Pour chocolate covering over the cupcakes without cases on a cooling grid. over the cheesecake using a spatula to smooth it.
  13. Place finished cake in refrigerator and allow to set for at least 4 hours or over night.
  14. Cheesecake Cupcakes in paper cases can be sprinkled with chopped nuts and drizzled with honey.

Note: Must use proper measuring cups and spoons

If you have time allow cheesecake to set overnight and add the chocolate to the cake the next day, then allow the chocolate to set up in the refrigerator.
